Some Meals I Made From My Fruit And Veg Box

As the raspberries looked enticing, that’s what I started with. They went into a bowl with Greek yoghurt, a drizzle of honey, and some toasted coconut shavings, a pretty and perfect breakfast. Over the next few days, we added fruit to our porridge and created a fabulous platter, ideal for picking at.

Over the weekend, I cooked a dhal with coconut milk, tinned tomatoes and red lentils, simmered with onion, ginger, garlic and spices. I added new potatoes, butternut squash and spinach, with green beans on the side. It made enough for both Saturday and Sunday dinners, with extra portions tucked away in the freezer.
