The three vegan meals I selected were nutritious and absolutely delicious, with easy-to-follow instructions. When I was asked if I’d like to try healthy home-delivered meals from Mindful Chef, I said yes. I selected the vegan recipes; healthy recipe boxes and family recipe boxes are also featured. After reviewing the six tempting vegan meals, we settled on Mini Portobellos with Mexican Chipotle Rice because my partner loves Mexican food. We choose the Jackfruit Puttanesca with Garlic Bean Mash because we haven’t cooked with Jackfruit before. The Creamy Coconut Chickpea Korma sounded so lovely, so that had to be on our list. In January, you can expect 160 new recipes, including vegan, meat, poultry and fish, with a focus on gluten-free and dairy-free.
Jackfruit Puttanesca with Garlic Bean Mash
“It was my first time cooking with jackfruit, and it tasted wonderful after being simmered with tomatoes, capers and olives. The cannellini bean mash was simple to make, and it tasted amazing,” Homegirl London.
The meal kits are put together using fresh local ingredients. The British meat is 100% ethically sourced with grass-fed lamb and beef, the fish is sustainably caught, and the chickens/eggs are 100% free-range. The meal kits arrive individually packaged in a paper bag with the meal number clearly labelled on the front. I put the relevant ingredients in the fridge and left the cans and non-refrigerated items in the paper bags. You receive the exact ingredients for each recipe, so all you have to do is prepare and cook. This is a great idea because you don’t have to seek out specific spices that you will only use once. It also cuts down on food waste which gets the big thumbs up from me.
Creamy Coconut and Chickpea Korma
“Wow, this dish was beautifully creamy and full of flavour. It was my favourite recipe thanks to the korma spice, chickpeas, spinach, carrots and ginger kick,” Homegirl London.
I followed the recipe book when I was ready to cook each meal. The instructions were straightforward, so I felt in full control. There is a beautiful picture of the finished recipe, and my plated dish looked very similar, which made me happy. All three meals were tasty and filling, and I didn’t feel the need to snack in the evening, which was great because I’d been snacking a bit too much lately!

After trying the Mindful Chef recipes, I would definitely recommend these to others. It is brilliant for busy people because it removes the food shopping part. You get to try new, tasty, healthy recipes without planning what you will eat. In the process, you become more confident at cooking and pick up a few tips along the way. I liked that you get a breakdown of calories, protein, carbohydrates and fat so you can keep an eye on what you eat. Overall, it was a brilliant experience, and I got to try food that I wouldn’t normally cook at home, although I will now because I feel more creative!
